Wood-fired pizza coming out of the mobile oven during an evening catering service in Dallas

Pizza menus and catering packages for Dallas events

Every Pizza de Weyss booking starts with a menu conversation. Tell us the event type, the guest count, and any dietary needs, and we shape a package around it.

2 Pie styles locked with your guest list 45 min

How our menus are structured

We build menus in layers rather than fixed combos. The base is pizza, cooked on site and served buffet-style or passed by our crew. From there you can add passed appetizers for cocktail hour, a salad or side, and a late-night snack service once the main meal winds down.

This structure lets a wedding, a corporate lunch, and a birthday party all use the same kitchen while eating very differently. We will recommend a shape once we know your timeline.

The four styles we cook

Most menus mix two or three of these. Each one behaves differently on a buffet line, which is why the mix matters more than the count.

Classic round pies

Our core round pies cover the standards guests expect. Margherita with tomato, mozzarella, and basil. Pepperoni. A white pie with ricotta and garlic. These are the pizzas that disappear first, and we keep them on every menu because a crowd wants familiar food alongside anything new. They also bake fast, which helps when the service window is tight and guests are hungry.

Neapolitan-style

This is our signature style: hand-stretched dough, a fast bake in the wood-fired oven, and a soft crust with a little char at the edge. Neapolitan-style pizza is best eaten right away, which is exactly what on-site cooking delivers. It works as the main course at a reception or as a passed bite during a cocktail hour. If your event has a long seated dinner, we plan the bake so pies come out in waves rather than all at once.

Detroit-style

Detroit-style pizza is baked in rectangular steel pans, giving it a thick, focaccia-like base with crisp, cheesy edges. The square cut makes it easy to serve on a buffet, and it holds its heat and structure better than a thin round pie. That makes it a strong pick for corporate lunches and large gatherings where people eat at different times. Mixing Detroit-style with our round pies gives guests a real choice.

Cooked on site, served the minute it lands

The oven travels with us and fires at your venue. Nothing is cooked in a distant kitchen and reheated under a heat lamp, so what you get on the table is the same pie a guest would eat at the trailer door. For a long seated dinner we stage the bake in waves so every plate arrives hot.

Vegan and gluten-free pizza options

Events today bring together guests with very different eating habits, and building a menu that works for all of them takes planning, not luck. Vegan pizza catering has come a long way from a single vegetable pie: we use plant-based cheese, roasted and marinated vegetables, and olive-and-herb combinations that stand on their own next to the classics. Vegan pies are prepared and labeled separately so guests can find them without asking.

Gluten-free dough is available and handled with separate tools and a separate prep area to reduce cross-contact. We are upfront that our kitchen also works with wheat flour, so we cannot promise a fully gluten-free environment. For guests with celiac disease or a severe allergy, we will talk through what we can and cannot control so you can make an informed call. Most hosts add a small number of gluten-free pies alongside the main menu.

What each dietary group gets

Vegan guests
Plant-based cheese pies, labeled at the table
Vegetarian guests
Margherita, white pie, roasted vegetable pies
Gluten-free guests
Separate dough, tools, and prep area
Guests avoiding dairy
Tomato-based pies without cheese on request

Tell us the share of each group on your guest list and we will set the count. If you are unsure what your list needs, we can help you ask the right questions on your RSVP form.

Package tiers, matched to the event

We quote in tiers based on service length and menu depth, and we match a tier to your event rather than push you toward the top one. Final pricing depends on your date, location, and guest count, so we quote each event individually.

1 Core pizzas · set service window · suited to team lunches and casual parties 2–3 hrs
2 Full package · passed appetizers, wider menu, longer window for weddings and larger events 4–5 hrs
3 Late-night add-on · a final fast push of hot pies once the main meal is done +60 min

Sides, salads, and late-night service

Pizza alone is a fine dinner, but a side or two rounds out a longer event. We offer simple salads and a rotating side to break up the meal. Late-night snack service is one of our most requested add-ons: a short, fast push of hot pies once the dancing starts, which tends to go over well at weddings and evening parties. It is a small addition that changes how the end of the night feels.

Custom menus and seasonal toppings

Beyond the core menu, we work with seasonal and globally inspired toppings. Roasted squash in fall, fresh herbs in spring, and combinations borrowed from other pizza traditions. If you have a signature flavor in mind, tell us and we will see if it works in our oven. We would rather test an idea with you before the event than surprise your guests with something untried.

Feeding a crowd: how we plan quantities

Quantity planning is where experience matters. The industry baseline of roughly one large pizza per two to three guests is a starting point, not a rule. We adjust for your other food, the time of day, the guest count, and whether alcohol is flowing. If pizza is the only food, we plan higher; if it sits alongside appetizers and dessert, we plan lower.

We will do this math with you so you are not guessing, and we will put the number in writing on your quote so the count is clear before the day.

Questions hosts ask before they book

Can you handle vegan and gluten-free guests at the same event?

Yes. Vegan pies use plant-based cheese and are labeled. Gluten-free dough is handled with separate tools and a separate prep area to reduce cross-contact. Our kitchen also works with wheat flour, so we will walk through what we can and cannot control before you commit.

Do you offer a tasting before we book?

We can arrange a tasting for larger events. Ask when you request your quote and we will find a time that works.

How far in advance should we book our menu?

Menu details can be finalized closer to the date, but the event date itself should be locked early, especially for weddings and peak-season weekends. Once your date is held, the menu is a working conversation rather than a deadline.

Can we mix pie styles on one package?

Yes, and most hosts do. A common shape is Detroit-style for the buffet line and Neapolitan-style for the passed service, with classic round pies holding down the middle. We will suggest a mix once we know how your guests will be eating.

What do you need from us to quote a menu?

The event date, the venue address, a working guest count, the service window you have in mind, and any dietary needs you already know about. Anything you do not have yet can be filled in later.

Send us the date and we will shape the menu

Tell us your event type, venue, guest count, and any dietary needs, and we will come back with a package and a written quote. If you want to taste before you commit, ask about a tasting in the same message.
