The people at the oven

The Dallas crew behind the oven

Pizza de Weyss is a mobile pizzeria and catering team. We bring a wood-fired oven to weddings, corporate events, birthdays and private parties, and cook the pizza in front of your guests. Based at 1500 Main St in Dallas, working across the city and the surrounding suburbs.

Who we are

A small team that runs the same setup every time

Pizza de Weyss started with a simple frustration: catering pizza rarely tastes like pizza. We built a mobile operation so the food arrives the way it should, hot out of a wood-fired oven, cooked in front of the people eating it.

We are a small team of pizzaiolos and event staff who work the same setup at every booking. That consistency matters more than any single ingredient. The person who stretches your dough has stretched thousands of them, and the crew that sets up your oven has done it in courtyards, parking lots and back gardens across Dallas. We keep the team tight so the standard does not drift between one event and the next.

That also means you talk to the same people from the first email to the last pizza. No rotating account managers, no handoff to a subcontractor on the day. When you book a date with us, the crew that confirms it is the crew that shows up.

How a service runs, from firing the oven to the last pie

Every booking follows the same run of show. The times shift with your event, the order does not. This is what the day looks like from our side.

  1. 1 Oven arrives and the fire is lit 90 min ahead
  2. 2 Dough comes out of proof and is balled 30 min ahead
  3. 3 Guests arrive and the first pizza goes out service start
  4. 4 Fire held steady through the whole service continuous
  5. 5 Last pie lands, station is broken down and cleaned 30 min after

Times are counted back from your service start, not from our arrival. If your venue needs us in earlier or later, we build the schedule around it before the day.

How we think about dough

Dough is the part guests notice last and the part that decides everything. Ours is mixed and proofed ahead of the event, then finished on site so it hits the oven at the right stage.

We keep the recipe simple: flour, water, salt, yeast, and time. That is a Neapolitan-style approach, which gives a soft, blistered crust that bakes in a couple of minutes. When we add Detroit-style pans to a menu, the dough and the bake change to suit the shape, because a square pan needs a different hydration and a longer, lower bake than a round pie.

What goes in

Flour, water, salt, yeast. No dough conditioners, no shortcuts to speed up the proof.

What changes it

Time, room temperature and the style you pick. The same recipe runs a round Neapolitan pie or a Detroit-style pan.

The oven and the fire

Our service runs on a wood-fired oven, brought to your venue and fired before the first guest arrives. Wood heat is not the same as a gas deck oven. It is hotter, faster, and less forgiving, which is why the pizzaiolo matters as much as the equipment.

The payoff is a crust with a bit of char and a chew that holds up under toppings. We manage the fire through the whole service so the temperature stays steady from the first pie to the last, which is the part that takes practice and the part we are picky about.

Where we cook, and what changes with the venue

We work across Dallas and the nearby suburbs, from downtown venues to backyard parties in East Dallas. The setup fits a courtyard, a patio, an open lawn, or a parking area with room to work.

Outdoor sites

Courtyards, patios, lawns and open lots are the easy case. We need a firm, level patch roughly the size of a small car, plus a clear path to roll the trailer in. Gravel, soft turf and tight gates are the things we ask about first.

Indoor service

Indoor service depends on the room, so we review the location before confirming. Ceiling height, door width, ventilation and the floor under the oven all have to work. Sometimes the answer is to cook outside and serve in, and we will say so.

Choosing a venue

If you are still comparing venues, loop us in early. A quick look at the floor plan or a photo of the space can save a problem later, and it costs you nothing to ask before you sign.

What we cook, and why the menu stays short

Our menu leans Neapolitan-style, with room for square-cut Detroit-style pies and a rotating set of seasonal toppings. We keep the classic cheese and pepperoni because guests expect them, and we build out from there with vegetable-forward and plant-based options.

The goal is a menu where every guest finds something, whether they eat everything or avoid dairy and gluten. We would rather run a shorter menu done well than a long list done carelessly, so we trim the list until every pie on it earns its place.

Pies come off the peel one at a time and go straight to the line, which is why we run a menu the oven can keep up with.

How we work with hosts and planners

Most of our bookings come from couples, office managers, and event planners who want the food handled without constant supervision. We ask for the details that matter: guest count, timing, venue access, and dietary needs. Then we build a plan and stick to it.

On the day, our crew arrives early, sets up quietly, serves, and cleans up. You should not have to manage us while you are managing your event. If something on site is not what we agreed, we sort it with your venue contact rather than interrupting your evening.

Before the date, you get the plan in writing: arrival window, service window, what is on the menu, and who to call. Planners can forward it straight to the venue, and venues usually stop asking questions once they have it.

What we ask before we confirm

  • Guest count head count
  • Timing service start and end
  • Venue access ground, gate, path
  • Dietary needs vegan, gluten-free
  • Venue contact who we coordinate with

Dietary planning as standard

Vegan and gluten-free requests used to be the exception at events. Now they are routine, and we plan for them from the start rather than sorting it out on the night.

Gluten-free dough gets its own tools and prep area to avoid cross-contact. Vegan pies use plant-based cheese and get labeled so guests can find them without asking. If your guest list has a mix of needs, tell us at booking and we will build the menu around it.

Why hosts trust us with their date

A wedding or a corporate event has one shot at getting dinner right. We take that seriously. We confirm details in writing, we show up when we say we will, and we flag problems before they become problems.

We are also clear about what we cannot do. If a venue cannot safely host a wood-fired oven, we say so and suggest alternatives, even when it costs us the booking. That honesty is what keeps planners and couples coming back, and it is the reason we would rather turn down a job than run it badly.

The experience guests remember

The oven draws a crowd. Guests wander over to watch the dough get stretched, ask what is going in next, and end up talking to people they had not met. That is the part hosts mention afterward.

The food is good, but the live pizza making is what turns a catering line into a moment. We plan the service so the oven stays busy without turning into a bottleneck, which means pacing the pies against the rest of your evening rather than firing everything at once.

Planning an event in Dallas? Let us look at the date.

Send the date, the venue and a rough guest count and we will come back with what fits, what the oven needs on site, and what the menu looks like. If your date is already gone, we will tell you straight away rather than leave you waiting.
